Dinner salad 3 – Cucumber salad

  • 5 cucumbers (15cm long)
  • 3 small spring onions with chives
  • 2 sugarfree coconut yoghurts ( I use vegangurt)
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp iodine free salt
  • 1/2 tsp ground black pepper

Cut cucumber in thin (2-3mm) slices, Chop onions and chives. In a separate bowl mix dressing of yoghurt, olive and spices. Mix all together and serve immediately. If you do not eat immediately, do not add dressing to cucumbers, if you do not want them to let go of water. Do it straight before consuming.


Dinner salad 2 – Cooked beetroot salad (Bouratchkees)

  • 1kg cooked beetroots
  • 1 onion (approximately 150g)
  • 2 tbsp rice vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tsp iodine free salt
  • 1/2 tsp ground black pepper
  • parsley (optional)

Cook beetroots and drain. Dice onion finely. Transfer to a big bowl, Add olive oil, vinegar and spices. Let it sit for few minutes until onion tenders. Add coarsely grated beetroots and sprinkle with chopped parsley leaves.


Dinner salad 1 – White radish with raisins

  • 1 big white radish plant
  • 1 sugarfree coconut yoghurt ( I use vegangurt)
  • 1 tbsp extra virgin olive oil
  • salt and pepper to taste
  • 2 tbsp raisins

Grate radish finely. In na separate bowl make a dressing of coconut yoghurt, olive oil and spices. Mix with radish and raisins and serve.
