I just wanted to eat sometthing crunchy and delicious. I came up to my thermomix, put some ingredients in and created these sticks. Perfect snack, canola oil free, very similar to grissini.
Ingredients:
Natural:
- 100g almonds
- 60g tapioca starch
- 100g corn flour
- 1/2 flat tbsp iodine free salt
- 30g olive oil
- 70g water
- 2 tbsp provence herbs
- 10g nutritional yeast
- 30g apple cider vinegar
- 3/4 tsp baking soda
With dried tomatoes and garlic:
- 100g almonds
- 60g tapioca starch
- 100g buckwheat
- 1/2 flat tbsp iodine free salt
- 30g olive oil
- 25g dried tomatoes
- 1 garlic clove
- 70g water
- 2 tbsp provence herbs
- 10g nutritional yeast
- 30g apple cider vinegar
- 3/4 tsp baking soda
- 2 tbsp dried garlic spice
Instructions:
- Preheat oven to 160ºC with double heater mode and circulation.
- Prepare flours by grinding almonds and buckwheat. Transfer to another bowl and set aside.
- Actually is the time put ingredients like garlic or dried tomatoes in a blender and grind them.
- Add water, olive oil, flours, spices, nutritional yeast and soda to a high speed blender. Eventually add apple cider vinegar and knead the dough.
- Form dough in 5cm diameter roller and cut with knife about 1,5cm wide slices.
- Using palms roll each slice in a 5mm stick.
- Arrange sticks on a baking tray covered with baking paper and bake in an oven for about 20 minutes.
- Let it cool and serve. The best are on the next day when get dry a little bit.
