Grissini sticks (gluten free, vegan)

I just wanted to eat sometthing crunchy and delicious. I came up to my thermomix, put some ingredients in and created these sticks. Perfect snack, canola oil free, very similar to grissini.


Ingredients:

Natural:

  • 100g almonds
  • 60g tapioca starch
  • 100g corn flour
  • 1/2 flat tbsp iodine free salt
  • 30g olive oil
  • 70g water
  • 2 tbsp provence herbs
  • 10g nutritional yeast
  • 30g apple cider vinegar
  • 3/4 tsp baking soda

With dried tomatoes and garlic:

  • 100g almonds
  • 60g tapioca starch
  • 100g buckwheat
  • 1/2 flat tbsp iodine free salt
  • 30g olive oil
  • 25g dried tomatoes
  • 1 garlic clove
  • 70g water
  • 2 tbsp provence herbs
  • 10g nutritional yeast
  • 30g apple cider vinegar
  • 3/4 tsp baking soda
  • 2 tbsp dried garlic spice


Instructions:

  1. Preheat oven to 160ºC with double heater mode and circulation.
  2. Prepare flours by grinding almonds and buckwheat. Transfer to another bowl and set aside.
  3. Actually is the time put  ingredients like garlic or dried tomatoes in a blender and grind them.
  4. Add water, olive oil, flours, spices, nutritional yeast and soda to a high speed blender. Eventually add apple cider vinegar and knead the dough.
  5. Form dough in 5cm diameter roller and cut with knife about 1,5cm wide slices.
  6. Using palms roll each slice in a 5mm stick.
  7. Arrange sticks on a baking tray covered with baking paper and bake in an oven for about 20 minutes.
  8. Let it cool and serve. The best are on the next day when get dry a little bit.
