Cool spicy cucumber soup (gluten free, vean)

Ingredients:

  • 600g cucumber (I had 3)
  • 1 celery stalk
  • 1 large avocado
  • 2 garlic cloves
  • 2cm small red chilli pepper
  • 1 tbsp olive oil
  • 1 tbsp nutritional yeast
  • a handful mint leaves
  • a bunch of dill
  • juice of 1/2 lemon
  • 1 tsp iodine free salt
  • 1/3 tsp ground black pepper
  • 100g filtered water

for serving to every bowl : 1 tbsp sunflower seeds, few black olives (ferrous gluconate free), some green leaves or chopped celery stalk.

 


Instructions:

  1. Place all ingredients in a blender and mix until smooth. If too thick add more filtered water.
  2. Serve cold, decorated with sunflower seeds, sliced olives and greens.
