Baked cauliflower & kidney beans spicy curry paste (gluten free, vegan)

Ingredients:

Marinade:

  • 8g small red chilli pepper
  • 20g garlic
  • 20g coconut oil
  • 1 tsp curry spice
  • 1/3 tsp ground black pepper
  • 10g lemon juice

 

  • 420g cauliflower florets
  • 250g cooked kidney beans
  • 1 tsp curry spice

 

Instructions:

  1. Rinse cauliflower florets, arrange on a baking tray lined with baking paper.
  2. Prepare a marinade: dice chilli pepper and garlic, add remaining ingredients and mix well.
  3. Smear the marinade onto cauliflower florets and bake in oven in 160°C until tenders. Let it cool.
  4. Put baked cauliflower, kidney beans and curry spice in a blender and process until smooth.
  5. Eat immediately or tranfer to a jar and store in the fridge.
